Raspberry & White Chocolate Shortcake

I tried this delicious shortcake at one of the tea parties my close friends have! I had to try this for myself and it didn't disappoint. It's so easy to make, so give it a go if you're craving something sweet! Arohanui Tiara x

Shortcake
Ingredients:
200g butter softened
1 cup caster sugar
1 egg
1 tsp vanilla essence
2 cups flour sifted
2 tsp baking powder
½ cup white chocolate chips
1 punnet of raspberries
Vanilla ice cream to serve (optional)
1.Preheat the oven to 180°C. Line a square cake pan with baking paper.
2.Cream the butter and sugar with an electric beater until light and fluffy. Add in the egg and vanilla and beat well.
3.Fold in the flour and baking powder into the wet mixture until well combined.
4.Press two-thirds of the shortcake mixture into the base of the baking pan. Add the raspberries and chocolate over the base. Sprinkle the remaining shortcake mixture on top and press down gently.
5.Bake for 35-40 minutes, until lightly golden brown. Allow cooling in the pan.
6.Serve with ice cream on the side (optional). Keep in an airtight container to eat later!
